Shrimp Pozole - Comfort in a Bowl

Here's a fun twist on a traditional Mexican comfort food. Simple ingredients with layers flavor from the subtle warm spices, hearty hominy, and fresh shrimp. This Pozole is sure to warm you from the inside out.

The Ingredients:

3 tbsp olive oil

1 spanish onion, diced

4 cloves garlic, minced 

6 stalks celery, thinly sliced

1 jalapeño, seeds removed, mince half, slice half for garnish

2 tbsp tomato paste 

2 - 4oz cans mild Chiles

2 tsp dried oregano 

1/2 tsp sea salt

1/4 tsp pepper

2-15oz cans hominy

5 cups water

Juice and zest of one lime

1/4 cup cilantro, chopped 

1 lb extra jumbo shrimp, cleaned and shelled, cut bite-sized

Garnish with, jalapeño, radishes, cilantro, or anything that you love


The Method:

  1. Place a large sauce pan over medium high heat.

  2. Add oil, onion, celery, garlic, and jalapeño. Sauté for about 5 minutes.

  3. Stir in tomato paste, oregano, salt and pepper. Sauté 1 minute.

  4. Stir in the chiles, hominy with the juice from the can.

  5. Add water. Bring to a boil. Reduce heat to a simmer and cook for about 20 minutes stirring occasionally.

  6. Stir in the shrimp, cilantro, and lime. Cook for about 5 minutes or until shrimp just turn pink. 

  7. Serve with your favorite garnishes.
