Sheet Pan Honey Mustard Cod with Sweet Potatoes & Veggies

This recipe is proof that a great meal can be fast, easy, and delicious. Sheet pan dinner are the best. All you need for a perfect dinners is a couple of good ingredients. You just toss a protein and some vegetables on to a pan and pop it in the oven. It takes no time at all to prepare and before you know it you have a high protein healthy meal. The flavor combinations are endless. Honey Mustard Cod is one of my favorites. The sauce is bursting with flavor and pairs perfectly with the sweet potatoes, veggies, and fish. You're going to want to eat this every week!





Here's why I love to use Cod Loins:

  • High in protein. 6oz of Cod = 38 grams of lean protein

  • Cod is a mild flavor fish that is tender and flakey

  • Cod is packed with B-Vitamins and minerals

Not a fan of Cod? No worries! This recipe also works well with salmon, shrimp, pork, or chicken. Which ever protein you pick, I know you'll love this recipe!


The Ingredients:

  • 2 Sweet Potatoes, peeled and cut in to 1inch cubes

  • 1Tbsp Olive Oil

  • Sea Salt & Pepper

  • 12 to 16oz Wild Caught Cod Loins, about 2 loins

  • 1 Lemon, cut into slices

  • 1 Bunch Asparagus, about 1lb. Cleaned and trimmed

  • 20 Cherry Tomatoes, washed

The Honey Mustard Sauce:

  • 1 Tbsp Grainy Mustard

  • 1 Tbsp Dijon Mustard

  • 1 Tbsp Honey

  • 1 tsp. Garlic Powder

  • Juice of 1 Lemon

  • Pinch of Sea Salt and Pepper




The Method:

  1. Preheat oven to 350 degrees F. Line a rimmed sheet pan with parchment.

  2. Spread the potatoes on one end of the pan. Drizzle with oil. Toss to coat the potatoes. Season with sea salt and pepper. Bake for 20 mins.

  3. In a small bowl, whisk together all the sauce ingredients until well blended. Set aside.

  4. Remove the sweet potatoes for the oven. Place the lemon sliced in the middle of the pan. Place the cod loins on top of the lemon slices and drizzle half the honey mustard sauce over the cod.

  5. Arrange the cherry tomatoes and asparagus on to the pan. Drizzle on the remaining sauce. Toss to coat the veggies.

  6. Bake in the oven for 15 to 20 minutes or until the cod is cooked through and slightly flakey.


Serves 2 to 3
