Holiday Prime Rib Au Jus

The holiday season is one of my favorite times of year. I love that it's a chance to slow down and embrace time with family, friends, and delicious foods. To make the season more enjoyable, it's nice to have simple recipes to celebrate with ease. Prime Rib Au Jus is the perfect main dish for this reason. It may sound fancy, but it's quite simple and only requires a handful of ingredients. The great thing about doing a whole prime rib is you don't have to concentrate much at all. Simply season the meat with a good amount of salt and pepper, put it in the oven, and then you can focus on enjoying and preparing a few side dishes to go along with it. It pairs so well with mashed potatoes, honey glazed carrots, and roasted asparagus for the ultimate holiday feast.
The Ingredients:
8lb Bone In Beef Prime Rib (have your butcher cut off the ribs and tie the roast)
4 tsp sea salt, divided
1/2 tbsp ground black pepper
4 to 6 springs fresh rosemary
1 large shallot, peeled and quartered
3 to 6 cloves of garlic, peeled
1 cup of water
1 cup of red wine

The Method:
Allow the prime rib to come to room temperature for at least 2 hours before preparing.
Preheat oven to 500°F.
Pat the entire roast dry with paper towels.
Sprinkle the entire roast generously with at least 2 tsp or salt and the pepper. Make sure to season the top, bottom, and sides.
Place the beef in a roasting pan bones down and fat cap up.
Arrange the shallots, garlic, and springs of rosemary around the roast.
Pour the water in the bottom of the pan around the roast.
Roast in the oven for 15 minutes.
Lower the oven to 325°F an continue to roast following the times below:
10 - 12 Minutes per Pound for Rare (120°F)
13 - 14 Minutes per Pound for Medium Rare (130°F)
14 - 15 Minutes per Pound for Medium (150°F)
Remove roast fro oven and transfer to a cutting board. Allow it to rest for at least 30 minutes. While it's resting, prepare the Au Jus.
In a small saucepan, add in the pan juices. If up don't have at least a cup, you can use beef bone broth for the remaining amount. Add in the red wine. Reduce the au jus down over low to simmer heat for at least 10 minutes or until the alcohol burns off. Season with salt and pepper if needed.
Serves 10 - 12 people
